What's NOT in our meat sticks?

We leave out a lot of the ingredients other snacks sneak in. Across our entire line, you'll never see:

  • Mechanically separated meat, trim, or scraps — we use whole-muscle brisket, full stop
  • Soy, wheat, or gluten of any kind
  • Seed oils (canola, soybean, sunflower, etc.)
  • Artificial sweeteners
  • BHA, BHT, or other artificial preservatives
  • High fructose corn syrup
  • Encapsulated citric acid
  • Synthetic casings (ours are always beef collagen)

Do they contain nitrates?

Great question — and one worth a real answer.

We don't use synthetic sodium nitrite or "pink curing salt" in most of our sticks. Instead, we cure with celery juice powder and cherry juice powder, which contain naturally occurring nitrates from plants. They do the same preservation work, keeping the meat safe and stable, but from a vegetable source instead of a lab.

Celery itself is a genuinely nutrient-dense vegetable. Beyond the naturally occurring nitrates (which your body converts into nitric oxide to support healthy blood flow), it delivers vitamin K, potassium, folate, and plant antioxidants linked to anti-inflammatory and heart-health benefits. Real food doing real work — not a synthetic chemical doing the job for it.

The one exception: our 7-Pepper.

It was the first recipe we ever made, and it still uses sodium nitrite as part of the cure. We're actively working on reformulating it to match the more natural curing system used in the rest of our line — celery and cherry juice powder, the way we do everything else. We'll let you know when it's ready.

How are they preserved?

We use a natural fermentation process — the same one that gives you yogurt, sourdough, and traditional salami. Good bacteria break down sugars and gently lower the pH, making our sticks shelf-stable while developing that signature tangy depth of flavor. We also cure with celery juice powder and cherry juice powder (nature's nitrites) on most of our lineup, and we wood-smoke low and slow, which adds another layer of natural preservation.

It's how meat has been safely preserved for thousands of years — long before there were chemicals with names you can't pronounce. Cleaner, more traditional, and better tasting. No harsh preservatives needed.

Do they need to be refrigerated?

Each stick stays flavorful and shelf stable for about a year thanks to our natural fermentation and wood-smoking process. Once opened (or if you prefer a firmer texture), pop them in the fridge. Easy, portable, and ready whenever hunger hits.

What's the spice level?

We've got a stick for every heat tolerance. Here's the ladder, mildest to spiciest:

  1. Original — Zero heat. Classic, garlicky, brisket-forward. The crowd-pleaser.
  2. BBQ Pepper Jack — A whisper of warmth from the pepper jack cheese, balanced by sweet, smoky BBQ. More flavor than fire.
  3. Pepperoni — Mild, savory warmth from classic pepperoni spices. Pizza in a stick.
  4. 7-Pepper —A blend of black, chili, red, jalapeño, chipotle, habanero, and red bell peppers. If you like a slow-building, tingling kind of heat, this one's for you.
  5. Jalapeño — Real, recognizable jalapeño heat. Medium kick with that fresh pepper flavor — not just spicy for spicy's sake.

Pro tip: the Jalapeño brings clean, bright heat. The 7-Pepper brings deeper, smokier, longer-lasting heat. Both are worth a try.

Where do we source our beef?

Most of our beef and ingredients are proudly American-made. For our grass-fed line, we go to a region globally recognized for producing exceptionally clean, grass-fed AND finished beef — Australia. While we import some cuts for quality, those products are still crafted, packaged, and shipped right here in the U.S., supporting American jobs and small businesses every step of the way.
