We don't rush brisket. So we don't rush the stick.

20 hours from brisket to stick. Most brands take under 2.

Whole-muscle brisket, fermented 12 to 16 hours, then slow smoked 6 to 9 over real hardwood. Made start to finish in our own Wisconsin facility.

What you watched, hour by hour

The 20 hours, one step at a time.

  1. Hour 0

    Whole-muscle brisket goes in

The cut Texas pitmasters build their names on. We trim the fat, grind the brisket, season it, then pack it into beef collagen casings in our own facility.

  2. Next 12 to 16 hours

    Fermented with live cultures

The way traditional salami is made. The cultures feed on a pinch of organic dextrose and turn it into that signature tang, which is also what keeps the stick shelf stable.

  3. Then 6 to 9 hours

    Slow smoked over real hardwood

6 to 9 hours in the smoker, low and slow, over a real apple-hickory hardwood blend.

  4. After the smoker

Texas roots, Wisconsin made

A BBQ family that put brisket in a stick.

What started in the kitchen of our family-owned Wisconsin restaurant became wood-smoked brisket sticks inspired by our love of Texas-style BBQ. The family studied BBQ in Texas at restaurants like the Salt Lick, and every recipe and smoke profile is still made by the same family, in our own facility. Over 300,000 sticks sold and counting.

Fantastic!

The 7 pepper really surprised me. Great pepper flavor without being to spicy! My only complaint is there needs to be more flavors.

Best meat sticks I’ve had

I tried so many, now I don’t have to look any further. They’re so tender and fresh. Amazing taste. Plus arrived on time and very happy with the packaging.

FAQ

Answers to your meatiest questions.

What's NOT in our meat sticks?

We leave out a lot of the ingredients other snacks sneak in. Across our entire line, you'll never see:

  • Mechanically separated meat, trim, or scraps — we use whole-muscle brisket, full stop
  • Soy, wheat, or gluten of any kind
  • Seed oils (canola, soybean, sunflower, etc.)
  • Artificial sweeteners
  • BHA, BHT, or other artificial preservatives
  • High fructose corn syrup
  • Encapsulated citric acid
  • Synthetic casings (ours are always beef collagen)

Want to go even cleaner? Our Original and Jalapeño sticks take it a step further — no corn syrup of any kind, no MSG, no synthetic nitrites, and made with 100% grass-fed-for-life beef. They're cured the old-fashioned way using celery and cherry juice powder.

What are the ingredients?

We believe in transparency, so here's the ingredients by flavor — right down the the spice blends and how the cheese is made:

ORIGINAL: Grass Fed Beef Brisket, Water, Salt, Minced Garlic, Minced Onion, Dextrose, Celery Juice Powder, Cherry Juice Powder, Sea Salt, Spice, Lactic Acid Starter Culture. Packed in Beef Collagen Casings.

JALAPENO: Grass Fed Beef Brisket, Water, Salt, Dried Jalapeños, Natural Flavors, Dextrose, Spices, Celery Juice Powder, Cherry Juice Powder, Sea Salt, Lactic Acid Starter Culture. Packed in Beef Collagen Casings.

BBQ PEPPER JACK: Beef Brisket, Pasteurized Processed Hot Pepper Cheese (Cultured Milk, Water, Skim Milk, Whey, Jalapeno Peppers, Red Bell Peppers, Cream, Sodium Phosphates, Salt, Sorbic Acid, Natural Flavor, Enzymes, Natamycin), BBQ Seasoning Blend (Sugar, Salt, Spices, Natural Hickory Smoke Flavor, Natural Flavors, Torula Yeast, Molasses Powder), Water, Potato Starch, Dextrose, Culture, Sodium Erythorbate, Celery Juice Powder, Cherry Juice Powder. Packed in Beef Collagen Casings.

PEPPERONI WITH MOZZARELLA: Beef, Pork, Processed Mozzarella Cheese (Low Moisture Part-Skim Mozzarella Cheese [Part-Skim Milk, Cultures, Salt Enzymes], Water, Cream, Sodium Phosphates, Salt, Lactic Acid, Sorbic Acid, Natamycin), Seasoning Blend (Salt, Spices, Corn Syrup Solids, Paprika, Monosodium Glutamate, Dehydrated Garlic), Pork Broth (Pork Stock, Water), Dextrose, Sodium Erythorbate, Lactic Acid Starter Culture, Celery Juice Powder, Cherry Juice Powder. Packed in Beef Collagen Casings.

7-PEPPER CHEDDAR: Beef Brisket, Pasteurized Processed Cheddar Cheese ([Cultured Milk, Salt, Enzymes] Water, Cream, Sodium Phosphates, Salt, Beta Carotene, Potassium Sorbate and/or Natamycin), 7 Pepper Seasoning (Salt, Corn Syrup Solids, Spices, 7 Pepper Blend [Black Pepper, Chili Pepper, Red Pepper, Jalapeno, Chipotle, Habanero, Red Bell]), Water, Potato Starch, Dextrose, Natural Flavors, Sodium Erythorbate, Starter Culture, Sodium Nitrite. Packed in Collagen Casings. CONTAINS: Milk.

How are they preserved?

We use a natural fermentation process — the same one that gives you yogurt, sourdough, and traditional salami. Good bacteria break down sugars and gently lower the pH, making our sticks shelf-stable while developing that signature tangy depth of flavor. We also cure with celery juice powder and cherry juice powder (nature's nitrites) on most of our lineup, and we wood-smoke low and slow, which adds another layer of natural preservation.

It's how meat has been safely preserved for thousands of years — long before there were chemicals with names you can't pronounce. Cleaner, more traditional, and better tasting. No harsh preservatives needed.

Why is Dextrose in your ingredient list?

We use a very small amount of dextrose during the fermentation process — not as a sweetener, but to help get fermentation started.

During fermentation, naturally occurring beneficial bacteria use the dextrose as a food source. The fermentation process consumes the available dextrose, which means it is not added to make our beef sticks taste sweet.

Dextrose serves an important purpose in the traditional fermentation process that gives our beef sticks their characteristic flavor and helps create the finished product.

Do they contain nitrates?

Great question — and one worth a real answer.

We don't use synthetic sodium nitrite or "pink curing salt" in most of our sticks. Instead, we cure with celery juice powder and cherry juice powder, which contain naturally occurring nitrates from plants. They do the same preservation work, keeping the meat safe and stable, but from a vegetable source instead of a lab.

Celery itself is a genuinely nutrient-dense vegetable. Beyond the naturally occurring nitrates (which your body converts into nitric oxide to support healthy blood flow), it delivers vitamin K, potassium, folate, and plant antioxidants linked to anti-inflammatory and heart-health benefits. Real food doing real work — not a synthetic chemical doing the job for it.

The one exception: our 7-Pepper.

It was the first recipe we ever made, and it still uses sodium nitrite as part of the cure. We're actively working on reformulating it to match the more natural curing system used in the rest of our line — celery and cherry juice powder, the way we do everything else. We'll let you know when it's ready.

Do they need to be refrigerated?

Each stick stays flavorful and shelf stable for about a year thanks to our natural fermentation and wood-smoking process. Once opened (or if you prefer a firmer texture), pop them in the fridge. Easy, portable, and ready whenever hunger hits.

What's the heat level?

We've got a stick for every heat tolerance. Here's the ladder, mildest to spiciest:

  1. Original — Zero heat. Classic, garlicky, brisket-forward. The crowd-pleaser.
  2. BBQ Pepper Jack — A whisper of warmth from the pepper jack cheese, balanced by sweet, smoky BBQ. More flavor than fire.
  3. Pepperoni — Mild, savory warmth from classic pepperoni spices. Pizza in a stick.
  4. 7-Pepper — A blend of black, chili, red, jalapeño, chipotle, habanero, and red bell peppers. If you like a slow-building, tingling kind of heat, this one's for you.
  5. Jalapeño — Real, recognizable jalapeño heat. Medium kick with that fresh pepper flavor — not just spicy for spicy's sake.

Pro tip: the Jalapeño brings clean, bright heat. The 7-Pepper brings deeper, smokier, longer-lasting heat. Both are worth a try.

Where do we source our beef?

Most of our beef and ingredients are proudly American-made. For our grass-fed line, we go to a region globally recognized for producing exceptionally clean, grass-fed AND finished beef — Australia. While we import some cuts for quality, those products are still crafted, packaged, and shipped right here in the U.S., supporting American jobs and small businesses every step of the way.

What if I don't love them?

We get it — not every flavor is for every person, and that's okay. That's why every order is backed by our Better With Brisket Guarantee.

If you're not completely satisfied, just email us at shop@primaleats.com with your order details within 60 days of your billing date. Send back the open and unused packaging from your order and we'll refund the full product price — no hassle, no hoops.

A couple of quick notes: shipping and handling fees aren't refundable, and we can't accept returns on sale items or gift cards. If your order arrived damaged or you got the wrong flavor, reach out right away — we'll make it right.
